Why use it?
Ordinary timestamps have no protection against manipulation.
Blog posts for example are usually associated with a date - but this date could be changed at anytime by the admin (or everybody else who have the possibility to).
Therefore you have two options.. either to trust or not to trust the admin/author.
At this point comes secure-timestamp.org into the game.
We - as an independent and trustfully third party - can digitally and cryptographicly sign your text.
This way everybody can validate your text later on and check if the text was really created (reported to us) at that time.
What does it cost?
Nothing. It is free for all.
